A jar of our delicious raw Irish heather honey delivered to your door.

Our heather honey comes from our apiaries in the Wicklow mountains. We love heather honey, and it’s a real delicacy. The heather in the Wicklow mountains only flowers for roughly 2-3 weeks per year so its always very reliant on getting good weather for that window. Thankfully this year we had a great harvest and are really proud of this delicious honey.

This honey was produced up in the Wicklow mountains in August. Heather honey has been recently studied by Trinity and DCU (2018) to show its comparable health benefits to Manuka honey.

From the judges 2024;

This has a golden amber hue and is silky in texture. There are floral notes, and citrus and treacle come through on the palate. The flavours are really prominent – it is a deliciously crafted product.

This has a startling, orangey gold appearance with a huge aroma of floral honey. It is a very unusual texture, like that of very well-cooked jam with little air bubbles. Flavourwise, it starts like dark, almost burnt caramel with flower notes, then ends quite bitter. It is a very distinctive honey which would not suit all tastes.

Initially there are great aromas of the heather and the beeswax. The flavours spread across the palate, clean, deep notes of heathers and beeswax with a lasting hint of gentle smoke. It is long lasting and has great depth.’

Heather honey requires a lot more work than regular honey. Each year we move the hives up to the heather when it begins to flower (only a two -three week window per year).

Heather is generally located in remote hard to reach areas of the mountains which can be difficult to access. The honey is also known as a thixotropic honey, meaning it is like a gel rather than a liquid, and therefore, can not be spun out like regular honey. We either produce it as cut comb or crush it out of the comb and filter it into jars.

The Conservation of the native Irish honey bee is at the heart of everything we do.

Our honey is raw, straight from the hive, lightly filtered and poured into our screen printed 227g glass jars. All of our packaging is sustainably sourced and can be fully recycled.

Raw honey will crystallise naturally over time. This can be reversed by gently heating the honey. This will return the honey to its runny form.
