Our soft set honey comes from Co. Wicklow. We are delighted to present this smooth and creamy spreadable honey.

Soft set, or creamed honey as it used to be known is made from regular honey in which the natural granulation process is controlled to give a rich and buttery honey texture. There is nothing added to soft set honey except honey that has already granulated naturally over time. We bring our bees down to Newcastle in Co. Wicklow in early spring

How we make our delicious and smooth soft set honey:

We introduce what is called the ‘seed honey’ into a batch of regular runny honey. The seed honey is honey that has granulated (or crystallised) over time. This is a natural process that happens to most raw honey. You will often find that honey in your cupboard will become granulated and begin to crystallise over time. The speed at which it crystallises will depend on what the bees have been foraging on and the temperature at which the honey is stored. We use a pestle and mortar to grind down the granulated honey to make the crystals as small as possible. This creates a smooth paste like honey- the seed. We introduce this seed into a batch of runny honey and stir it for over a week until the seed honey is replicated throughout the honey.
